Potato Soup
Friends for lunch on Friday liked the 2 point potato soup: 1 bag of Ore-Ida frozen O'Brien hash brown potatoes, 1 envelope fat-free country gravy mix, and 4 cans fat-free chicken broth. Combine in a pot and cook until the potatoes are tender, about 30 minutes. Toward the end of cooking, mash some of the potatoes with a potato masher. Makes 8 servings.I also made a 3 point lemon cake, but I think that I needed to punch holes in the cake with the end of a wooden spoon instead of just a fork, as the liquid did not make the cake as moist as it should have been. The recipe is a variation of the "Cake Mix/ Diet Drink" recipes that are everywhere on the net. A good site is www.shadesofjaim.com
