Breakfast
There were 8 of us for breakfast this morning, and I tried 2 new dishes on my co-workers. Mediterranean Fruit Parfait (2 points): Bring 3/4 C. 1% milk to a boil; stir in 1/3 C. couscous. Simmer, covered, for 1 minute and then remove from heat and let stand for 5 minutes. Fluff with a fork.In a small bowl, combine 1/2 C. plain nonfat yogurt, 1/2 C. nonfat sour cream, 1 T. honey. Add couscous & mix well.
In a separate bowl, combine 1/2 C. sliced strawberries, 1/2 C. blueberries, 1/2 C. raspberries and 1/4 C. chopped dates.
Using 6 clear glasses (I used martini glasses), layer the bottom with fruit, then couscous, then fruit.
South Beach Breakfast Cups (3 points): In non-stick skillet, cook 4 oz. turkey bacon, 1/2 of a green pepper, chopped, and 1/4 c. chopped green onions (till done, about 5 minutes or more). Cool slightly.
Stir in 1 1/4 C. egg substitute, 12 oz can of sliced mushrooms (drained). Divide evenly into 6 muffin pan which has been sprayed with Pam. Sprinkle each with low-fat cheddar cheese. Cook @ 325 degrees for 20 minutes or until egg is set. Good with salsa.
